MY ANSWER:
The debate over this question has been UN-ending! So I quite literally wrote Ubisoft themselves. I got a response from an OFFICIAL Ubisoft representative and this was his answer in quotations!!! (My personal final thought after all of this? I don’t care who it is anymore. Heehee )

Honestly there is no hard and fast rule on who it is as it is a bonus item and not canon to the game. So if you wanted it to be Altair it can be Altair, if you believe it is Ezio dressed as Altair that works too.

Perhaps it is Jade Raymond, the AC producer, dressed as Ezio, pretending to be Altair ”

Debate moderator Tim Russert then cited a poll saying that 14 percent of Americans claim to have seen a UFO, to which Kucinich asked: “What as that percentage?”

Tim Russert asked Sen. Barack Obama about his belief in the existence of life of life beyond Earth.
